Slow Cooked Chicken Cacciatore

Ingredients
  • 5-6 Wynhdmas Chicken Breasts
  • 1 Onion
  • 3 Cloves of Garlic
  • 1 Tin Chopped Tomatos
  • 1 Green Pepper
  • 400g Baby Mushrooms
  • Salt & Pepper
  • Italian Seasoning
  • Balsamic Vinegar
  • Olive Oil
  1. Start by heating a large frying pan with a dash of oil over a high heat.
  2. Season both sides of the chicken with salt and pepper, before adding into the hot pan. Cook for around 4 minutes on each side before transferring it into the slow cooker.
  3. Turn the heat down slightly and wipe clean, then add in another splash of olive oil. Toss in the balsamic vinegar, chopped onion and garlic and begin to brown together and add into the slow cooker.
  4. Into the slow cooker, you’re then going to want to add in the chopped tinned tomatoes, green pepper, mushrooms and Italian seasoning and cook on low for 4 to 5 hours or high for 1-2 hours – ensuring that the chicken is cooked through.

You can either serve the chicken breasts whole or chopped, served with a generous amount of sauce, over your side of choice – we suggest pasta or rice and finish off with a sprinkling of parmesan cheese.
