Feel-Good Chicken Meatballs & Spaghetti

  • 500g chicken mince available from our Borough Market, Chiswick or Chelsea stores
  • 100g fresh breadcrumbs
  • 1 large egg, beaten
  • 1 onion, chopped finely
  • 25g parmesan, finely grated
  • 4 garlic cloves, crushed
  • 2 tbsp olive oil
  • 2 x 400g cans chopped tomatoes
  • 1tsp of Worcester sauce
  • 300g spaghetti
  1. Place your chicken mince in a bowl and add the breadcrumbs, egg, onion, parmesan, and half the garlic. Season well, and shape into approx 20 meatballs. Place onto a baking tray and brush with oil. Bake for 20 minutes at 200C/180C fan/gas 6 until cooked through and golden brown.
  2. While your meatballs are cooking, add some oil to a pan and fry off the remaining garlic. Add the chopped tomatoes, Worcester sauce, season and simmer for 10-15mins until the sauce starts to thicken.
  3. Bring to the boil a large pan of water. Add the spaghetti and cook for 10 mins until al dente.
  4. Time to bring the dish altogether. Add the cooked meatballs to your tomato sauce and warm through. Drain the spaghetti and place your meatballs on top. Sprinkle with some more parmesan and serve.
