Guinness Beef Casserole

  • 600g Wyndhams beef cut into chunks
  • Flour
  • 2 cloves of garlic
  • 330ml of Guinness
  • 330 ml beef stock
  • 2 peppers
  • 1 courgette
  • 1 carrot
  • 1 red onion
  • 50g parmesan
  1. Start by coating the beef in the flower, salt and pepper, before popping it into a large casserole dish to brown. Whilst the meat is browning, pre-heat your oven to 160oC.
  2. Add in your garlic, Guinness, and beef stock and bring to the boil. Once boiling, you then want to pop it in a preheated oven for 3 hours.
  3. Now the meat is fully cooked, add in the chopped peppers, carrot and courgettes and place the dish back into the oven for a further 5 minutes.
  4. Finally, you want to spoon the casserole into bowls and top with the parmesan, parsley and chopped red onion.
