Harissa and Lamb Sausage Rolls

Ingredients
  • 600g Wyndhams Minced Lamb
  • 2 tbsp Harissa
  • 1/4 Ground Ginger
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Cumin
  • 1 tbsp Chopped Coriander
  • 2 Garlic Cloves
  • Rind of 1 Lemon
  • 325g Ready-to-Roll Puff Pastry
  • A Handful of Sesame Seeds
  1. Start by heating the oven to 200 degrees. In a large bowl add in all your ingredients and using your hands combine all of the ingredients together.
  2. Onto a floured worktop lay out the puff pastry and cut down the middle lengthways, before rolling each piece out with a rolling pin. We’re then going to make two ‘sausage parcels’.
  3. Divide your lamb into four and roll them into sausage shapes. Lay 2 of them, end to end, on one piece of pastry. Brush the pastry with the egg mixture and then pull up the other side of the pastry to encase the sausage shape and press together.
  4. You then want to repeat this with the other 2 sections of meat. Cut each pastry parcel into four before transferring to a baking sheet, brushing with the remaining egg mixture and sprinkling with sesame seeds.
  5. Then bake the sausage rolls for 20-25 minutes until the pastry is nice and golden. Leave to cool and then pack for your next picnic!
