Everything tastes better when there’s cheese involved. These melt in the middle mozzarella burgers are sure to spice up your alfresco dinners this summer.
Start by heating the oil in a frying pan and frying off the onion until soft. You then want to add in your crushed garlic and thyme leaves and continue to fry for a further 2 minutes before taking off the heat and leaving to cool slightly.
Whilst we wait for the onion mix to cool, tip the mince into a large bowl and massage the meat – this ensures maximum tenderness. Add in your onion mix, along with the breadcrumbs and egg yolk and remember to season generously.
Mix the 2 kinds of cheese, before dividing your beef mixture into four.
Once divided pat each one into a burger shape around 4cm in thickness. Split the cheese into 4 and form these into 4 firm ball shapes, this is best done with your hands.
Then take the burgers and put the cheese balls into the patty’s and ensure that the cheese is then covered by the burger meat.
Now out to the barbecue we go. When the flames have died down, grill the burgers on each side for around 5 minutes until charred.
Serve in a fresh brioche bun, alongside some guacamole and a handful of Mediterranian inspired salad and you’ve got yourself a delicious weeknight meal.
