Orange Chicken Traybake

  • 4 free-range Wyndham's chicken thighs
  • Fresh tarragon
  • Zest of 1 orange
  • A handful of orange slices
  • 300g peppers
  • 1 red onion
  • Juice of 1 orange
  • 1tbsp honey
  • 1tbsp wholegrain mustard
  1. Start by pre-heating the oven to 190oC. In a bowl, you want to mix the tarragon and orange zest along with a pinch of salt.
  2. Season the chicken well with honey, mustard and salt & pepper.
  3. Into a roasting tray, add the red onion, orange slices and pepper. Pop the chicken on top and drizzle with the orange juice.
  4. Roast for 35-40 minutes or until the chicken is cooked through. Ta-dah!

Chefs Tip – Serve this light traybake with new potatoes and a side salad.
