Cajun Pork Summer Salad

Ingredients
  • A juicy pork tenderloin from our Chiswick or Chelsea stores
  • Cajun seasoning: a pinch of salt, pepper, garlic powder, onion powder, cayenne, thyme, oregano, paprika and celery seeds
  • For the salad: spinach, red onion, avocado, corn black beans and cucumber
  1. Make your Cajun seasoning by adding a pinch of salt, pepper, garlic powder, onion powder, cayenne pepper, thyme, oregano, paprika and celery seed into a small bowl and add a few drops of the oil of choice and mix together.
  2. Take the pork and sear in a hot pan until golden brown. Remove the pan from the heat, drip your cajun seasoning over the pork, and slide into a hot oven. {200C/fan 180C/gas 6}
  3. Roast for 20 mins or until the middle has reached 70C basting throughout to keep the meat succulent and juicy.
  4. Let the pork rest while you mix up the salad. Take your spinach, red onion, avocado, corn, black beans and cucumber and toss into a bowl.
  5. Slice up the pork, add on top of the salad, and enjoy!
