Short Rib Beef Burrito

  • Cooked Short Ribs - grilled, braised or oven baked
  • Olive Oil
  • Bell Peppers
  • Onion
  • Kosher Salt & Pepper
  • Can Diced Tomatoes
  • Shredded Cheese
  • Flour Tortillas
  • Lettuce
  • Green Onions
  • Salsa (Optional)
  • Sour Cream(Optional)
  1. Remove rib meat from bones and chop finely, then place in a bowl and set aside.
  2. In a skillet, add the olive oil, diced bell peppers and onions, along with salt and pepper seasoning and cook over medium heat. Make sure you cook until it’s softened.
  3. In the bowl with the meat, add the diced tomatoes, the cooked vegetables and the shredded cheese and stir until it’s well mixed.
  4. Wrap the mix in soft taco tortillas and secure with a toothpick.
  5. Place the wrapped burritos on a 350° grill over an indirect fire or on a baking sheet in a 375° oven.
  6. Cooked for 20 minutes or until lightly browned.
  7. Serve with shredded lettuce, salsa and sour cream. Guacamole is also a great addition if you have avocados on hand.
