These irresistibly sweet and sticky, American style pork ribs are a real crowd pleaser and the perfect addition to your weekend dinner spread.
Ingredients
2 racks of Wyndhams pork ribs
600ml coke
8tbsp tomato sauce
8tbsp soft brown sugar
2tbsp soy sauce
2tbsp Worcestershire sauce
2tbsp sweet chilli sauce
1tsp paprika
Start by pre-heating your oven to 160oC and putting the ribs into a roasting tin, you want to make sure that they are a snug fit! Pour the coke over the ribs, then cover with tin foil before putting in the oven to roast for around 2.5 hours, turning at the half way point. You want the ribs to be tender, but not falling apart.
Whilst we have the ribs cooking, put the remaining ingredients into a saucepan and gently heat until bubbling – remember to continually stir the mixture.
When the ribs are fully cooked, lift each one out and leave to rest on kitchen paper to dry out slightly. Whilst they are drying, tip away the remaining liquids and wipe the tin. Add the dry ribs back into the tin and coat all over with the sauce.
Cover again with tin foil and leave to marinate in the fridge for at least an hour.
Fire up the barbecue and wait for the flames to die down enough to add the ribs and cook for around 20 minutes, turning occasionally and basting well with the remaining sauce.
When the ribs are looking nice and sticky with a crispy outside, slice up and you’re ready to serve!
