Luxury Christmas Gravy

  • 2 Onions (Chopped)
  • 1 Large Carrot (Chopped)
  • 1 Wyndham's Turkey Neck
  • 1L Wyndham's Stock
  • 4tbsp Flour
  • 5tbsp White Wine

1. Start by adding your chopped onion and carrot into a large pan along with the turkey neck. Pour in the stock and leave to simmer for at least one hour; the longer you leave to simmer the richer the flavour.⁠

2. Strain and remove the vegetables and turkey before returning the liquid back to the pan and onto the hob.⁠

3. Combine the flour and white wine, then add into the pan with the stock – you’ll want to stir this continuously until it has begun to thicken. If your gravy is looking a little thin, add a little more flour to help thicken it.⁠

4. Heat in the pan until piping hot, add in the juices from your cooked turkey, season to taste then add to a warm gravy boat.
