Mouthwatering Meaty Breakfast Skillet

Ingredients
  • 400g Wyndhams bacon
  • 180g ham
  • 180g chorizo
  • 1 red onion
  • 1 red pepper
  • 2 spring onions
  • 8 large eggs
  • 200ml semi-skimmed milk
  • Salt & pepper
  • 60g grated cheddar
  • 60g grated mozzarella
  • 120g of frozen hash browns

1. Start by heating your oven to 180oC. Whilst the oven is heating, pop the bacon under the grill until crispy before transferring over to a plate and leaving to cool slightly.

 

2. In the same pan, add in the chopped ham and chorizo and cook for around 3-4 minutes, then using a large spoon pop into a bowl and leave to one side.

 

3. Back to the pan we go, add in the onion, peppers and spring onions and cook until the veggies are starting to soften before turning off the heat and leaving to cool slightly.

 

4. Add the cheese, shredded frozen hash browns, bacon, ham, chorizo and veggies, into a bowl and season well.

 

5. Add the mix into the large frying pan, crack the eggs on top and cover with foil before placing into the oven for around 20 minutes or until the eggs are cooked through. Remove the foil, top with any extra cheese and leave to go golden in the oven for a further 5 minutes!
